super-yum

I made the BEST dinner the other night.
This is true!
Even the girls at home told me - this is the best pizza ever. It's a deluxe veggie pizza - in place of pizza sauce I covered the homemade dough with basil pesto. Then I sprinkled a bit of grated cheese (not much - trying to avoid dairy). I topped it with artichoke hearts, olives, diced tomatoes & mushrooms. It was magnificent! Next time I'm going to add garlic and scallions - thinking about also putting on some sliced hearts of palm. What I love about this, besides the taste and nutrition: It takes so little time! From start of mixing the dough to sitting at the table eating: 20 minutes!

Dough Recipe:
mix 1 pkg yeast with 1 Tablespoon sugar & 1 cup warm water
Let sit 5 minutes
Mix in 1 tsp salt, 2 Tblsp olive oil, 2 1/2 c flour.
Spread onto pie plate, then layer toppings. Bake at 350 for about 15 minutes.

  1. YUM! I'm not a big red sauce person so pesto on my pizza is a long time favorite. Nix those mushrooms and I'm on board :)
